Big Balls Meatballs
INGREDIENTS:
-1 lb lean ground sirloin
-12 cherry tomatoes
-2 egg whites
-3/4 cup Panko
-1/2 cup milk
-1 1/4 cup chopped onion
-salt and pepper
-1/2 tsp oregano
-1 tbsp parsley
-Pam cooking spray
INSTRUCTIONS:
In a bowl, combine all ingredients, except meat and tomatoes. Add mixture to ground sirloin and mix well. Shape 1/4 cup of the mixture evenly around each tomatoe so that the tomato is hidden inside the meatball. Spray a baking dish with Pam. Place meatballs in baking dish and bake at 375 for 25 to 30 minutes.

For tonight’s supper I made…Shrimp Jambalaya!
I tweaked the recipe a little, as I am never one to follow recipes exactly, which is probably why so many times I’ve flopped at baking. I added a package of all natural chicken sausage, half a feshly squeezed key lime and a tbsp of lemon flavored cod liver oil, quadrippled the garlic, and threw in a few dashes of madras curry powder, onion powder, marjoram, and tarragon. Mmmmm Mmm…Delicious! Never made a Jambalaya dish before, but will definately do it again. Thanks for the inspiration.
